A Taste of Old Florida: Hubbard's Marina Family Fish Recipe

There’s something magical about a warm summer evening in Florida—the kind where the salty breeze rolls in off the Gulf, mingling with the scent of the day’s fresh catch sizzling on the grill. The sun, still clinging to the horizon, casts golden streaks across the water, and laughter echoes from the dinner table, where family and friends gather after a long day on the boat.

For generations, the Hubbards have lived by the tides, their lives woven into the rhythm of the sea. After a day spent fishing under the blazing Florida sun, Captain Dylan’s grandmother would retreat to the kitchen, her hands moving instinctively, preparing a meal that had been served countless times before. A simple yet perfect dish—fresh fish, caught just hours earlier, coated in a thin layer of Hellmann’s Mayonnaise and seasoned to perfection.

As the fish baked or sizzled on the grill, stories would flow as freely as the evening breeze. Tales of Captain Wilson Hubbard’s wild adventures at sea, of storms weathered and record-breaking fish landed. The younger ones would listen wide-eyed, soaking in every word, while the older generation nodded knowingly, remembering their own nights spent swapping stories over a meal just like this.

And then, as the fish was served—golden brown, flaky, and infused with the flavors of salt, smoke, and summer—the table would fall quiet for just a moment, the kind of hush that only comes when a meal is so good it demands your full attention. But soon enough, the chatter would start again, forks clinking against plates, glasses raised in celebration of another day well spent.

This dish isn’t just dinner; it’s a memory, a tradition, a love letter to the waters that have provided for the Hubbard family for generations. And if there’s one thing that has never changed, it’s Hellmann’s Mayonnaise.

Now, you can bring a little bit of that old Florida magic to your own table!

Captain Dylan’s Tips for Selecting Seafood

🛥 Trust Your Sniffer – Fresh fish should smell clean and ocean-fresh. Strong fishy odors? Toss it back!
🎨 Be Color-Conscious – Fish fillets should have a consistent color. Any discoloration? Move along!
👀 The Eyes Have It – Fresh fish should have clear, bright eyes, though deep-water fish may have slight bulging.

2️⃣ Place cleaned, dried fillets on a foil-lined baking sheet.
3️⃣ Coat one side of each fillet with Hellmann’s Mayonnaise. Sprinkle with all seasonings. Flip and repeat on the other side.
4️⃣ Bake for about 10 minutes. Watch carefully—once the crust is golden brown, the fish is ready!

Grill Directions:

1️⃣ Preheat grill to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.
2️⃣ Place cleaned, dried fillets on a plate.
3️⃣ Coat one side of each fillet with Hellmann’s Mayonnaise. Sprinkle with all seasonings. Flip and repeat on the other side.
4️⃣ Place fillets directly on the grill or on a well-oiled grill mat.
5️⃣ Grill for about 4-5 minutes per side, flipping carefully with a spatula. The fish is ready when it easily flakes with a fork and has a nice golden crust.
